This is the creamiest vegan ice cream I have tasted. I had to wrestle with my 3 year old to take a decent picture of this bowl of deliciousness. This recipe makes 2 cups of ice cream, but disappears pretty fast.
This is a guilt free ice cream filled with healthy fat and nutrient richness. The sweetness comes only from dates. so, you can eat the entire batch of ice cream without feeling bad. Thank god for whoever found that frozen bananas can be made into ice creams.
I adapted the recipe from earthy andy blog. She has a neat and amazing blog about plant based raw vegan life style. She also has 2 more amazing ice cream recipes, which I can’t wait to try. Banana coconut chocolate chip ice cream (Vegan)
- 2 frozen bananas
- half a can of chilled full fat coconut cream
- 6 – 8 pitted dates (reduce it based on your desired sweetness)
- 1 tsp vanilla extract
- 1/3 cup of vegan chocolate chips (I used my home made chocolate bar chopped)
Blend them all together in a high powered blender until creamy. You can dive in right after blending or freeze it for 4 hours in a freezer safe bowl.
Note: If you are using coconut milk, then chill the coconut milk overnight in the refrigerator. When making the ice cream, flip the can before opening. Pour out the liquid and use only the solids.
